Some coffees have beautiful floral or fruity notes that are quickly lost as the roasting development progresses. These coffees are better suited to a lighter roast to highlight these complex flavours. Lighter roasts are typically consumed using filter methods such as pour over or aeropress.

However, we also enjoy drinking these filter roasts as an espresso, as the lighter roast profile keeps more of the flavour complexity.
